Carrot, Celery and Apple Slaw

Wash and grate:

One cup of organic carrots

One cup of organic celery

One cup of peeled organic apple

Combine all three into glass bowl and set aside.

In a glass measuring cup combine:

1/4 cup of organic, cold pressed, extra virgin olive oil

1/4 cup of rice vinegar

1/4 teaspoon of yellow mustard

1/4 teaspoon sea salt

1/8 teaspoon of black pepper

Add a squeeze of lemon juice

Whisk all ingredients together thoroughly

Pour mixture into glass bowl with the shredded ingredients and toss until well combined.  Cover and place in the refrigerate to allow mixture to chill and season for at least a 1/2 hour.

Add parsley or cilantro to garnish and serve cold.
