Spring Foraging

Foraging or gathering is the act of finding and harvesting wild foods.  Springtime has an abundance of wild edibles to enjoy such as asparagus, dandelion greens, purslane, nettles, and my favorite, fiddlehead ferns.  If you are not a forager, most items like fiddleheads can be found at your local farmers market. They are high in iron, fiber and omega 6 fatty acts. They also are an antioxidant. Be sure to cook them fully to break down the shikimic acid. Morels are also a wonderful find at this time of year! All you need is a little grass-fed organic butter to sauté them and bring out their nutty flavor.
